How often does a dog come into heat?

Many bitches come into heat about every six months, but not all. Some, often of small breeds, cycle three times a year; large breeds often space their cycles 8 to 12 months apart; a few breeds, like the Basenji or the Czechoslovakian Wolfdog, have only one a year. The rhythm stays fairly regular for a given bitch, though.

That's why the calculator asks for her usual rhythm, then relies on her own cycles as soon as you add earlier heats: it then takes the median interval of her last cycles. With no information at all, it counts about six months.

When should she be mated?

Day 1 of the heat is the first day of discharge. Matings most often happen between days 10 and 14, but the timing of ovulation varies a lot from one bitch to another.

Progesterone tests at your vet's show the right time far more reliably than a calendar: use the window shown to plan, not to decide.
